Providing a growing global population with healthy diets from sustainable food systems is an immediate challenge. Although global food production of calories has kept pace with population growth, more than 820 million people have insufficient food and With about half the calories coming from carbohydrates in the form of wheat, rice, corn, and soy along with a generous helping of refined oils (chemically extracted from corn and soy), the EAT Lancet diet (whether intentionally or by accident) has stumbled upon the perfect formula that will drive you to consume more of the food-like products that the EAT Foundation group of companies (who are generously bankrolling the extravaganza) will benefit from you consuming more of! Earlier this year, a groundbreaking study from the EAT-Lancet Commission outlined a climate-friendly path to feeding 10 billion people “within planetary boundaries.” Its recommendations included limiting meat consumption to about an ounce per day, or roughly two chicken nuggets, and bulking up on low-impact foods like beans. The EAT-Lancet Commission diet consists of a large amount of vegetables, fruits, whole grain, legumes, nuts and unsaturated oils, some seafood and poultry, and little to no red meat, processed meat, added sugar, refined grains, and starchy vegetables.
